Location: Valpolicella Classica, the towns of Marano di Valpolicella and San Pietro in Cariano.

Production
20% of the grapes are left to dry in order to obtain a future pleasant roundness wine.
Fresh grapes are pressed in a de-stemming winepress followed by a 7 day fermentation in steel containers with automatically controlled temperature and indigenous yeast (Spontaneous Fermentation).
Aged Partly in Oak Barrels and partly in Stainless Steel tanks for 12 months.

Winemaking Method: Fresh grapes are pressed in a de-steaming winepress followed by a 7 days fermentation in Stainless Steel Containers at an automatically controlled temperature and with indigenous yeast (Spontaneous Fermentation). In February, that year’s wine is fermented a second time with the marcs (leftover skin, etc) of the dried Amarone and Reciotto grapes for 5 to 7 days (Apassimento). Aging: The wine is put to age in Oak Barrels and cherry wood barrels for a total period of 12 months. Then is further aged in bottles for 3 to 6 months.

Bouquet: A complex aroma of Red fruits, such as raspberry, cherry and morello, cherry evolves into a spicier bouquet of vanilla and cloves.

Massimo Coletti follows the principles of Organic Agriculture without using chemicals , herbicides or synthetic products in his vineyards. He spends a lot of hours in his vines with manual work and bringing vitality to its soils.

The harvest is completely hand picked. In the wine cellar he follows the work carried out in the vines with natural vinifications and long maturations with yeast to guarantee a natural stability to the wines and low use of sulfites.
The wine becomes sparkling with a second fermentation in a closed barrel. Then the wine is filtered and put into bottles.

"The Dark Side gets its name from the
three thick-skinned varietals that I
blended, giving this wine its dark ruby
color. The rich nose is all black cherry

earth run through the mid to the finish. I
find this wine well-balanced for being
on the darker side of the spectrum."

Both translate to the palate, the citrus picks up on the mid, but the melon brings complexity and interest, with hints of a delightful tropicality! It has fantastic structure throughout; perfectly balanced acidity gives you a crisp, clean finish with just a bit of spice... while fantastic with food I find this one to be an excellent porch-pounder."
